Throughout my academic journey, I have gained valuable experience through internships and part-time positions related to my field of study. Industry Experience: 

Oobli Inc, Davis 

Product Development Intern (September 2024 - PRESENT)

  • Currently assisting in the utilization of Oobli plant-based sweet proteins in food applications. 

  • Engaged in projects implementing Brazzein, Monellin and Thaumatin into dairy, baked goods, drinks, sauces, ice cream, candy and protein-forward foods. 

  • Previously involved in protein shelf life stability studies involving chocolate protein shakes. 

  • Led and completed fiber project. Investigated, compiled and organized fiber database to streamline future sweet protein projects where bulking agents are needed. 

  • Proficient in the following laboratory skills: titration, buffer preparation, pH and viscosity measurement, pipetting, sweetness and flavor data analysis, sample preparation, protein encapsulation. 

Brand Ambassador (November 2023- August 2024) 

  • Drove sales of FDA approved sweet-protein based teas, lemonades and chocolates. 

    • Initiated and led sales agreement with the University of California Davis.

    • Increased sales exponentially in the city of Davis over the span of 7 months.

    • Conducted over one hundred product demos.

    • Facilitated and closed sales agreement with the Davis Food Co-Op, the first NorCal grocery store to carry Oobli. 

  • Carried out sponsorships with over fifty different non-profits, student organizations, sports clubs, Greek life and academic institutions. 

Talentnook-Palo

Project Manager Intern (remote), (January 2023- June 2023). 

  • Led research & development of Talentnook’s Palo, an online educational product https://palonow.com

  • Developed Palo’s pilot program that delivered online tools of acquiring 48 social skills to four middle schools. Several hundred students received timely, relevant, and impactful social emotional learning content throughout the 2022-2023 academic year.

  • Reviewed and categorized over four thousand student responses which provided timely alerts to counselors to assist at-risk students.

  • Reached out to several hundred educators to conduct interviews that provided Palo with up-to-date insights in the post-pandemic period.

  • Co-authored and edited Unlocking the Power of Social Connection: Enhancing Middle Schoolers' SEL Skills through Interactive Approaches.

UCD Research Laboratory Experience

Giulivi Laboratory, UCD Veterinary School Undergraduate Student Researcher (December 2023- PRESENT)

  • Currently in the process of completing UHP senior thesis: Role of Glucagon-Like Peptide-1 Receptor Agonist (GLP-1 RA) on Mitochondrial Function: Evidence from a Systematic Review and Meta-Analysis (In progress) 

  • Conducted quantitative data synthesis and statistical analysis of mitochondria morphology.

  • Evaluated mitochondrial morphology in non-human primates experiencing age-related macular degeneration. 

  • Mentored students, two summers in a row, from the UC Davis Young Scholars Program and community college students from Avenue M. 

  • Investigated the effect of Metformin on mitochondrial morphology and analyzed copper deposits in Willson’s disease mice models. 

Au Laboratory, UCD Nutrition Department

Research Assistant (June 2025 - December 2025)

  • Directly assisted in the implementation of The Plant Village Food Recognition Assistance and Nudging Insights (FRANI) app.

  • Explored the intersection of nutrition and AI by using FRANI to assess dietary intake. 

  • Performed weighted food records in conjunction with FRANI utilization in field testing.
